In The Recipe For “cowboy Coffee,” Egg Shells Are Used To Clear The Brew. How Does That Work?

The recipe calls for several egg shells per gallon of coffee. They are stirred in with the coffee and somehow make the solids settle out so the coffee is clearer. I don’t think it’s the stickiness of egg whites — I think it has to with charge of particles.

  3. I am not sure how it works, but it is just delicious that way. We have it around the campfire each year at our family reunion. Seems to make the coffee more smooth, no bitterness. I have tried to stick egg shells in my basket along with the grounds when I use my Mr. Coffee machine, but it doesn’t seem to work. Guess it needs to stew awhile.

  7. I think that you are right about the charge particles and the shell also adds calcium to the coffee. Cowboy coffee is really good all the time, but only if it percolated and not dripped.

  9. Its a form of rafing which is done to clarify a consomm’e. The term refers to the fact that the ingredients rise to the surface and form a floating mass. Which leave the liquid clear.
